Gyani's falooda shop at Chandni Chowk

Though Delhi is known for its cosmopolitan outlook for ages, it is only at the turn of the century that the young India got drawn towards the fast food culture. But for middle aged man whose way to nostalgia is through the old walking stick, eyes brighten up even at the mention of home made confectioneries. Involuntarily the mind winds through the serpentine gullies of old Delhi and stations itself at Chandni Chowk.There is certain disadvantage at the congested Chandni Chowk. But for those foodies, who are unmindful to the space or lack of it, it is the ultimate place to satisfy their taste buds. Many eateries in this area are managed by the 4th and 5th generations and so are the customers; the relationship is maintained through the generations. And one among them is Gyaniji and his falooda.

Gyani's rabri falooda shop is on Church Mission Road - the one that leads from Khari Baoli to the Old Delhi Railway Station. If you get lost, you can ask any shopkeeper in Chandni Chowk, and he will point the finger towards the direction of the shop. Just follow the direction and you will find a shop covered by a crowd waving frenetically the coupons and tokens.

Once there, buy a coupon for a glass of rabri falooda and start your stunt. Enter the crowded queue, yell from the bottom of the stomach, and wave the coupon to the two men manning the counter. The men are calm. Once a thick glass of rabri (full of dry fruits such as pistas and almonds) arrives, a thick line of crushed ice will be layered, a fistful of falooda gets splattered, and some scented water gets added. The man gives the mix one passionate shake and slips a spoon to the glass, which would then be handed over to the one with the loudest voice or the most frenetic token shaker
Wriggly snow-white falooda, cold from iceboxes, laced with lines of kesar, it's manna for the soul.
